Banana Breakfast Bircher
Need the perfect breakfast recipe to kickstart your Meat Free Monday? We have just the thing. This delicious Banana Breakfast Bircher will set you up for your busy Monday (Tuesday, Wednesday and Thursday). The best part is that most of it is prepared the night before and only needs assembling in the morning.
70g Porridge Oats
2 Tbsp Golden Linseeds
2 Ripe Bananas
140g Frozen Summer fruits
175g Natural Yoghurt
Put the porridge oats and linseed in a bowl and cover with 200 ml of boiling water. Mash in the bananas and the frozen summer fruits.
Refrigerate overnight. In the morning, assemble the bircher in glass jars or glasses, a layer of the porridge oats followed by a layer of yoghurt, repeat, and then top with some more frozen berries.
This recipe should last you for at least three breakfasts. It’s low in fat but packed with the carbs and protein you need to kickstart your day.
